I was a bit confused by that as well. But then I remembered my reading of the comic book "Fables", did some googling, and came to the
understanding that the "Jack" of the Beanstalk tale is probably the same character as the "Jack" from the Giant Killer stories. Or, at least, a permutation or retelling from the same stories.
