You pretty much have it right...

But it's the episodes aired prior to May 31st.  Generally you'll see all the episodes of a successful/renewed show aired before that date, but there are instances where they'll hold episodes back for whatever reason.  For example, Fringe had one season 1 episode held over that aired randomly during season 2.
