A real money market (like CX) has no Virtual Specialist

You're not missing anything at all. It's just that the Cantor Exchange (CX) won't have a Virtual Specialist setting the price; other traders set the price. So, yes, it's reasonable to assume that the other traders on CX will almost immediately adjust their prices - eliminating gaps like you're seeing right now in CXCMB.CX.
