Perhaps 'The Kessel Run' is a route through a asteroid belt that smugglers use to bypass Imperial checkpoints. The Millenium Falcon is a small and agile ship that Han Solo is proud of and perhaps his parsec boast is more about that he has found a path through the asteroid belt where he travels less actual distance than other smugglers do traveling the same belt. This allows him to clear the belt faster and jump to light speed quicker which lessens the chances that he get caught.
You and I are running through Central Park. You follow a pathway that takes 2 milles to get to the other side of the park. I run across the grass and up and down hills and it only takes me 1.5 miles to get across the park. I got across the park in less distance which means I was able to hail a taxi and get out of that area in less time than you.
