A lot of production credits on movies are just people who are involved on the money side of things and not creative. Zanuck has been working with Burton since Planet of the Apes or maybe even earlier so I'm sure Burton trusts his opinion more than others.

It's supposed to be a wild ride fairytale. There are ten(!) producers besides Burton himself. Have they let him have too free reins? {nm} Facto Mar 01, 18:37

I'm sure Zanuck is the main producer and probably had the closest involvement with Burton (and let him do what he wanted) secretstalker Mar 01, 18:41

Zanuck brought Tim Burton onto the project, but Joe Roth and Team Todd were developing it at Disney (2007) before he got involved. notfabio Mar 01, 23:59

The Hollywood Reporter disagrees, it seems, stellar review Facto Mar 02, 20:52
