I had that same thought -- there were 2 movies worth of story but (SPOILER)
Not sure where the natural "break" point would have been, and it would have thrown the Fanboys into a frenzy if they had stopped midway with a cliffhanger like Endgame and a "To Be Continued" rather than an ending.
Maybe leave everything unsettled about who the ultimate bad guy was until there was a reveal at the 2 hr mark that it was Palpatine, followed by "Intermission" of 18 months until the summer of 2021.
