Re-think how to do them, maybe. But they'll keep making them because getting it right will earn them a lot a lot of money.

Look at the MCU. "Here's a heist movie" "Now here's a space opera" "In this one, the heroes are fighting each other" "Now here's a really big one where everyone teams up" etc etc  Even though they're all Marvel and all similar, they're all different enough that audiences haven't gotten sick of them.

That's what Disney wants to achieve with Star Wars and why they'll keep making spin-offs. The challenge facing them is they can create new characters that audiences have to learn to care about, or they can bring back old characters with new actors, but what audiences really want is the same characters with the same actors doing the type of cool stuff they did in the original movies.
