Starbond market pricing incorporates the value of upcoming releases. Why change that when someone dies?

If anything, delisting at the current price at time of death is a better reflection of the TAG system. Why should an actor's value otentially change wildly depending on whether they die right before or right after a release? Isn't their contribution to the film just the same? The market price factors all that in. Changing the price to only released movies deviates more from the Starbond pricing model than just taking the last price IMO.

Let's discuss an imprecise time of death. If someone dies right around the time of a movie opening and exact time of death can't be determined (even though science can pin these things down fairly well) then how can you know whehter that movie should be included in the TAG or not? The decision on whether to factor in that last movie could very well significantly change the value of a Starbond. That would add even more uncertainty IMO.

If you are using the last price then that would be a less volatile change in value. The last price could be set as the midpoint time in the coroner range, average of the two endpoints, or even some other method. Regardless, those prices will all generally be more similar to each other than the two prices of including or excluding the actors last credited film.
