Baseball - The Natural (There are many fine options here, but none of them generate the emotional response in me that The Natural does every time I watch it.)
Football -Friday Night Lights (Tough call because I like Jerry Maguire here as well as Invincible and Any Given Sunday. No right answer.)
Basketball -Hoosiers
Hockey - Slap Shot (Miracle would be a good choice here, but if any sport's best movie should be a comedy, it's gotta be hockey.)
Horse Racing - Seabiscuit
Track & Field - Chariots of Fire
Billiards (is that a sport?) - The Hustler
Auto Racing - Talladega Nights (Duh.)
Feel free to add more sports to your list if you want, but try and really make sure they're sports. If you can't even find it on ESPN 8 (The Ocho!) at 3 in the morning, it's probably not a sport.
