Dothraki tactics were awful, but seeing those flaming swords go out was crucial to setting the mood of “oh crap anything could happen”. It’s like how Worf was the TNG Enterprise tough guy, so he got beat up a lot to show how undefeatable the villains were.
Arya sneaking past everyone - she went from movie sword fighter to Sandor’s protege to assassin school who can hold her own against Brienne and then snuck around zombies who could hear her blood drops but not her movements. It’s all from the character build up, it’s not out of nowhere.
